Sable fish ( Anoplopoma fimbria)or "black cod" has a firm, velvety texture that is rich in unsaturated fats. This delicacy is a favorite of knowledgeable chefs seeking an alternative to the fast disappearing Chilean Sea Bass. The fishery is Marine Stewardship Council certified and OceanWise recommended. Due to the high oil content the fish is easy to cook as it maintains a moist, buttery consistency. It can be prepared by; baking, grilling, poaching and smoking.
