Sable fish (Anoplopoma fimbria)or “black cod” has a firm, velvety texture that is rich in unsaturated fats. This delicacy is a favorite of knowledgeable chefs seeking an alternative to the fast disappearing Chilean Sea Bass.
Due to the high oil content the fish is easy to cook as it maintains a moist, buttery consistency. It can be prepared by; baking, grilling, poaching and smoking.
The fishery is Marine Stewardship Council certified and OceanWise recommended.
