Albacore tuna (Thunnus alalunga) is a highly migratory species caught far offshore by trollers or pole and line in the pristine waters of the North Pacific.
The soft pink flesh is wonderful as sushi and becomes firmer and white when cooked. Only sear lightly and don’t overcook!
Albacore is delicious smoked and is a favourite of chefs for its versatility. Very low in Mercury and high in Omega 3’s Pacific Albacore is Marine Stewardship Council Approved.
